How to Make Afelia?
Ingredients
- 1,200 grams pork neck
- 1 onion
- 1 garlic clove
- 2 tablespoon olive oil
- 2 bay leaves
- 300 grams of red wine
- 500 ml seed oil
- 1 kilo of potatoes
- 1 tablespoon coriander seeds
- 1 tablespoon oregano,
- dry lemon zest from 1 lemon
- 2 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper as needed
Directions
Step One
Place the pot on medium heat. Cut the pork into 3-4 cm pieces and put them in a bowl.

Step Two
Coarsely chop the onion and garlic and put them in the bowl with the pork. Add the olive oil, salt, and pepper and mix well.
Step Three
Transfer to the hot pot and saute for 3-4 minutes until the pork turns brown. Add the bay leaves and deglaze with the red wine.

Step Four
Put the lid on the pot, lower the heat and let the Afelia simmer for about 2 hours. After 2 hours, turn off the heat and set the pot aside to cool down.
Step Five
Place a deep frying pan with the seed oil on heat. Peel the potatoes and cut them into small cubes.
Step Six
Put them in the hot oil and fry them. When the potatoes are ready, place them on pepper to remove the excess oil, and add them to the pork mixture.
Step Seven
Place a pan on the heat, add the coriander seeds and saute for 1-2 minutes. We put them in a mortar and crush them. Put the coriander in the pot and add the oregano, the lemon juice, and the lemon zest.
