How to Make Shkmeruli?

Ingredients

  • 1 kilograms chicken 
  • 1 tablespoon crushed garlic 
  • 1 cup (250 ml) milk
  • Salt as needed

Directions

Step One

To prepare Shkmeruli, clean the chicken well, cut it in half, and sprinkle salt on both sides. Place the chicken skin in a buttered pan over high heat to brown the skin quickly. 

Step Two

Put a unique, heavy cast-iron lid press on top; its diameter should be slightly smaller than the pan so that it touches the chicken directly. 

Step Three

If we don’t have such a lid put a heavy object on top. After 6-7 minutes, check on the chicken; if the skin is browned and crispy, flip it over, put the lid on the pot again and lower the heat.

Step Four 

Remove the fried chicken from the pan, cut it, and move it to a dish. In the pan where the chicken was fried, fry the crushed garlic in the remaining oil. The garlic should be juicy, so do not fry it a lot. 

Step Five

When the color changes a little, pour 1 cup of milk (for those who don’t like milk, water or 10% cream is good), let it boil for 2 minutes and dip the chicken into the sauce.
