How to Make Persian Biryani?
- 600 grams mutton
- 1 medium onion
- 1 tablespoon brewed saffron
- ½ of a medium white liver
- 1 piece cinnamon stick
- Salt and black pepper as needed
- Turmeric and cinnamon as needed
- 1 lavash or sangak bread
First, we chop the meat with the white liver and put it in a pot or pressure cooker. Then, divide an onion into 4 parts and add it to the pot with salt, black pepper, turmeric and cinnamon.
Now, add enough water to cover all the ingredients. Next, put the pot on the heat and wait until the meat is cooked thoroughly. If you use a pressure cooker, it takes about one to one and a half hours. Cooking Persian biryani in the pot takes about 2 to 3 hours.
Next, pour the white meat and liver into the meat grinder or mixer until thoroughly mixed. Add the meat broth to the ingredients and put it on low heat to keep it warm.
Add the brewed saffron to the meat, then knead it for a few minutes until it becomes smooth. If you have a biryani spoon, put it on low heat to heat it (if you don’t have a special spatula, you can use small pans).
Pour some oil and cinnamon powder into the pan and wait until the oil gets hot. Then, pour some meat into the pan and press it with the back of a spoon until it is smooth. Wait for a few minutes until the Persian biryani is fried.
How to Serve Persian Biryani?
Put lavash bread or Naan sangak into the broth and place it on a tray. Then, put the prepared Persian biryani on the bread, put some minced white liver next to the meat, and decorate it with walnuts according to your taste and enjoy!
