How to Make Jókai Bableves?
Ingredients
- 400 gr smoked ribs
- 300 gr of broad beans
- 2 bay leaves
- 2 garlic cloves
- 1 carrot
- ½ piece of celery
- ½ kohlrabi
- 1 parsley root
- 250 gr smoked sausage
- 100 gr flour
- 1 egg
- 1 onion
- 2 cups of flour
- red pepper as needed
- 2 dl sour cream
- salt and pepper as needed
Directions
Step One
For Jókai bean soup, soak the beans overnight. After they are soaked well, dry them, and set them aside.
Step Two
Wash the ribs, put them in a pot, and add water. Put the pot on medium heat, put the lid on it, and cook the smoked ribs (Do not add salt because smoked meat is salty.)
The ribs are ready when you can push a fork into them.
Step Three
Add the soaked beans, bay leaf, chopped carrot, celery, kohlrabi, parsley and the sausage cut into rings. Mix the ingredients well, put the lid on the pot, and cook over low heat.
Step Four
In the meantime, knead the flour with the egg and salt. When the beans are almost soft (the vegetables and the sausage will be cooked by then), place the dough on a floured tray and continue cooking together.

Step Five
When everything is cooked in the bean soup, half-fry the chopped onion in the butter, add flour and crushed garlic and fry together.
Step Six
When onion and garlic are fried, remove the pan from the heat, stir in the red pepper, and pour it into the soup. Dilute the sour cream with the soup, then pour it into it.

How to Serve Jókai Bableves?
Adjust the thickness of the soup. To do it, add enough water to make it a good consistency. If necessary, add salt and boil well. Serve the Jókai Bableves with baked bread, and enjoy it!
