Step Three

Prepare the cocoa and walnut sponge cakes in the same way as above.

Step Four

For the vanilla sauce, mix the egg yolks with the flour, sugar, cream, vanilla and a little milk in a bowl and stir until they are well mixed. Boil the rest of the milk and mix it with the ingredients in the bowl. Place in a water bath, thicken with continuous stirring with a whisk.

Step Five

Soak the raisins in a little water and put them in the microwave for a few minutes so that they swell. After a few minutes, take them out and set them aside.

Step Six

For the syrup, take a pot, pour sugar into 0.3 liters of water and wait until it reaches the boiling point. Meanwhile, add the grated orange and lemon peel and the rum. Set aside to cool.

Step Seven

For the chocolate coating, melt the butter and mix in the flour. Once they are mixed, add the milk, diced chocolate, cocoa powder, sugar and rum. Thicken with a whisk while continuously stirring (preferably in a water bath). The consistency should not be too thick.

Step Eight

Soak the sponges well with the syrup, then first on the walnut sponge cake, spread the walnuts with the vanilla sauce, and sprinkle raisins. Put the cocoa sponge on top, spread it with the sauce, and in the same way, sprinkle raisins and walnuts on it. Finally, place the vanilla sponge on top, spread the remaining sauce and sprinkle cocoa powder on it. We put it in the refrigerator.
