Qurabiya is a cookie mainly prepared with almonds, sugar, and eggs. It is filled with pistachio nuts and almonds, which makes it an expensive cookie. Generally, this cookie is known as qurabiya of Tabriz or Qurabiya of Turkey. There are different types of Qurabiya, such as walnut and coconut Qurabiya. How to Make Qurabiya?
- 150 grams of almonds
- 200 grams sugar
- 3 egg whites
- ¼ teaspoon vanilla
- Almonds and pistachios as needed
To prepare the delicious Tabrizi Qurabiya, we first separate the skins of the almonds, then put them in a food processor and mix until the almonds are pureed. Next, pour almond puree with sugar and vanilla into a bowl.
Now, separate the egg white, add it to the almond mixture and mix well until the ingredients are combined. Now cover the bowl with cellophane.
At this stage, we put the bowl in the refrigerator, then let the almond puree mixture rest for 8 hours. After this time, take the bowl out of the refrigerator, and pour the mixture into the grinder.
Grind the almond mixture and knead well until its color is light and white. If the dough is hard, add egg white to it, then knead again until the ingredients are formed.
At this stage, set the oven to 350 degrees Celsius, then let the oven heat up completely. Cover the oven tray with oil paper, then pour the Qurabiya dough into a pastry bag.
Now we pipe the dough in a circle shape in the oven tray, then pour some chopped almonds and pistachios along with sugar on the dough. Next, place the tray in the oven, then let the cookies cook for 20 to 30 minutes.
Finally, after this time, we remove the tray from the oven, separate the cookies from the oil paper, store them in a bowl, and put the lid on the bowl.
Note: Qurabiya cookies dry quickly if you don’t cover them.
