  1. First of all, grate the onion and garlic cloves in small sizes, then squeeze them in a clean kitchen towel, so that the excess juice is out.
  2. Mix them with ground meat, salt, pepper, turmeric, and sumac and knead perfectly to get an integrated mixture. Here is a perfect technique to strengthen the mixture: Shape the mixture into a big ball.  Take it out of the bowl, and drop it back. Repeat these steps 5 to 6 times, and be sure that you will have a well-kneaded mixture!
  3. Add some vegetable oil to a frying pan, and put it on the heat. Spread the mixture into the pan in a way that covers the bottom of the pan. Put the lid on, and let the pan stay on heat for around 10 minutes.
  4. Once the mixture starts releasing its juice, uncover the pan, and let the juice evaporate for 5 minutes.
  5. In the meantime, cut the tomatoes in halves, and put them in a skewer. Grill the skewered tomatoes from the skin side over the stove heat.
  6. Going back to your kabab tabei, divide the meat into quarters or any shape you desire, using a spatula. Now put the lid, and let your kabab be grilled for some more minutes.
  7. Flip the kabab pieces over, and let the other side be grilled.
  8. After about 30 minutes since you started your cooking, the mouthwatering kabab tabei is ready.
