  • 3 carrots
  • 1 bay leaf
  • 150ml olive oil
  • 5 grated tomatoes (on the grater)
  • 1 tbsp tomato paste
  • 1/2 bunch of parsley
  • 1 cup water

Directions

Step One

Finely chop the onion and pour it into a little olive oil in a deep saucepan. Peel the potatoes cut them into quarters, and add them to the pot.

Add the carrot cut into thick slices or sticks. Add the bay leaf and sauté all the ingredients well. Then Add the tomato paste, stir and add the grated tomatoes.

Step Three

Bring the ingredients to a boil. Now, if you use fresh green beans, add them to the pot, and if you use frozen green beans, put them in the pot for 15 minutes before adding them to the potatoes.

Put the lid on the pot and leave it over medium heat. After about 20 minutes, open it to see if the food has liquids. If necessary, add water to the ingredients.

Note: The green beans release water; you may not have to add the water.

Step Five

Before the Lathera is ready, add the olive oil to thicken your sauce. Remove it from the heat and set it aside.
