How to Make Khoresh Kadoo Halvaii?

Ingredients 

  • 7 large pieces of pumpkin 
  • 1 large onion 
  •  2 tablespoons tomato paste 
  • 12 Bukhara plums 
  • 1 fresh lemon juice 
  • 250 grams mutton 
  • 25 grams butter
  • brewed saffron as needed
  • Salt, black pepper and turmeric as needed
  • Cinnamon powder and cardamom powder as needed
  • Curry spices and sugar as needed

Directions

Step One

To prepare delicious pumpkin stew, cut the meat into equal pieces. Then peel the onion and chop it into small pieces. Next, put a suitable pot on low heat.

Step Two

Now pour some liquid oil into the pot, add the onion, and fry until the onion becomes light and golden. Next, add the chopped meat to the onion, and fry until it changes color.

Step Three

At this stage, add turmeric, curry, and cinnamon powder to the meat and fry until the aroma of the spices is released. Then, add enough boiling water to the meat and let the meat cook for 2 hours.

Step Four

After 2 hours:

  1. Remove the pumpkins’ skin and place a suitable pan on low heat.
  2. Add oil and butter to the pan and let the butter melt.
  3. Put the pumpkins in the pan.

Step Five

Fry the pumpkins completely, then take them out of the pan, pour the tomato paste into the pan, and fry for 5 minutes until the raw smell of the tomato paste is removed, and the color is lightened.

Step Six

Add sugar, salt, cardamom powder, fresh lime juice, and tomato paste to the meat. Mix well and let the stew boil until the sauce reaches the desired consistency. Next, add pumpkin and plum to the Khoresh kadoo halvai.

Step Seven

Now, put the lid on the pot and let the stew cook for 30 minutes until the pumpkin is cooked. 

Note: The cooking time of the pumpkin should not exceed the specified time because the pumpkin will be crushed.

Step Eight

Finally, when Khoresh kadoo halvaii is ready, take it off the heat and pour it into the desired dish.
