Noghl is a Persian candy, which is one of the famous souvenirs of Urmia city. This candy is cooked with syrup, nuts and seeds like aromatic cardamom seeds, coriander seeds, roasted almonds, walnuts, and pistachios. But the original type is usually made with roasted almonds.

How to Make homemade Noghl?
Cooking time: 15 minutes
- 6 glasses sugar
- 1 tablespoon glucose or some cream of tartar
- Almonds as needed
- Walnut kernels as needed
- Pistachios as needed
To make Noghl almonds, you must first prepare the syrup and then submerge nuts, dried rose, cardamom powder, etc., in the cooled syrup.
Pour some water into a pan and add sugar to it. Put it on medium heat and stir the sugar and water until they are well combined. Now, clean the sides of the pot with a spatula and let the mixture of water and sugar boil.
Add liquid glucose or cream of tartar to the syrup mixture and quickly stir the ingredients. Keep stirring until the ingredients become thickened. If you have a cooking thermometer at home, you can measure the temperature inside the dish. Whenever the temperature is around 115 degrees Celsius, the mixture is ready.
After the syrup is ready, turn off the flame and pour them into a bowl. Allow the ingredients to cool slightly. To make Noghl almonds with different flavors, you must put the nuts into the syrup prepared before. Then, slowly remove the kernels with the help of a small spoon. Put oil paper in a dish or tray, and put Noghls on it; after one side is dry, flip it over and let the other side dry.
How to Serve Noghl?
Put the Noghls in a suitable bowl and keep them in the refrigerator. Serve them fresh with tea whenever you want.
Note: When preparing the Noghls, they will dry as you shape them. So try to place them in the desired shape on oil paper, and if you want to change the appearance of the Noghls, shape them with the help of a knife edge.
