Gata bread is one of the most delicious Armenian bread, which is very suitable and nutritious for breakfast or dinner. Gata bread is actually a type of Armenian pastry that they prepare on Christmas, and each one in Armenia has its recipe.
This bread is almost like a brown cake and is eaten in a decorated or plain form. In the old days in Armenia, Gata bread was cooked in the oven because they could keep it longer, but nowadays, you can prepare this delicious bread in the oven. Gata Bread History
Gata is a traditional Armenian sweet bread often served at weddings and other special occasions. The dough is made with flour, sugar, yeast, and milk and is usually filled with nuts or dried fruit.
Gata has been made in Armenia for centuries, and the recipe was likely brought to the country by Persian traders. The bread was originally made with unleavened dough, but over time, Armenians began to add yeast to the dough to make it lighter and sweeter.
Today, Gata is still a popular treat in Armenia and can be found in most bakeries. If you’re lucky enough to try this delicious bread, you’ll understand why it’s been a favorite in Armenia for many years.
How to Make Gata Bread?
- 2 cups flour
- ½ cup sweet yogurt
- 1 egg
- 50 grams butter
- ½ tablespoon yeast
- ½ tablespoon baking powder
- 1 pence vanilla and cardamom powder
- 2 tablespoons liquid oil
- ½ cup brown or white sugar
- 1 cup walnut kernels
- 70 grams butter
- ½ cup flour
- 1 teaspoon cinnamon powder
- 1 egg yolk
- Brewed saffron as needed
To prepare a delicious Gata bread, put all the ingredients at room temperature 30 minutes before. Take a bowl and pour one egg into it.
Stir the egg with a hand mixer to remove its texture from coagulation. Add the sweet yogurt to the eggs, and mix again with the hand mixer until the ingredients are combined and uniform.
Now, put the butter on the indirect heat of the kettle and steam until it melts. Next, add the melted butter to the egg and yogurt mixture and stir until the ingredients are combined and uniform.
At this stage, for a better taste, add vanilla along with cardamom powder to the egg mixture, and stir.
Note: After adding each ingredient, stir until they are combined and uniform.
Now, pour the flour with yeast, salt and baking powder into a suitable bowl, then mix well until they are uniform. Next, pour the oil into the egg mixture and mix.
At this stage, pour the egg mixture into the flour mixture. Then mix with a wooden spoon and knead the dough with a closed fist for 10 minutes until a smooth and uniform dough that does not stick to the hands is obtained.
Now, put the dough on the work surface, then knead it again. Grease the inside of a suitable bowl with some liquid oil, then knead the dough and place it inside the bowl.
Cover the bowl with cellophane, then let it rest for 1 to 1.5 hours at room temperature until it’s doubled in size. In the meantime, you can prepare the middle ingredients of Gata bread.
For this purpose, pour walnut kernels into the food processor and mix until the walnut kernel is crushed. Then, place a suitable pan on low heat, and add the butter to the pan.
Let the butter melt, add flour to the pan and fry until the raw smell of flour is removed. Next, add brown sugar, cinnamon powder, and chopped walnuts to the flour mixture.
Now, mix the middle ingredients, take the pan off the heat, and let it cool. After 1 hour and 30 minutes, put the dough on the work surface and knead again with a closed fist until it becomes puffy.
Divide the dough into 2 equal parts with a cutter, then cut and cover them with a freezer bag or cellophane. Now, let the dough rest for another 15 minutes in the kitchen.
Now, roll out the dough on the work surface with hand pressure, then we roll out the dough to half a centimeter in diameter with a rolling pin. Next, we set the oven to 180 degrees Celsius and let it heat up.
Now, grease the oven tray, place the dough in the tray, and pour the middle ingredients on it at a distance of 1 cm from the edges. Next, roll the second dough to the shape and size of the first dough.
Put the second dough on the middle ingredients and apply some milk on the edges of the dough. Then push the edges of the dough with a fork. Separate the egg yolk from the egg white.
Note: You can draw a pattern on the bread with the back of a glass.
Pour the egg yolk into the appropriate bowl, add the brewed saffron, and stir with a fork until combined. Dip the brush into the egg mixture, then rub it on the Gata bread.
Now, fill a suitable bowl halfway with water, and put it in the oven to create moisture. Next, place the tray in the middle of the oven and let the bread stay in the oven for 15 to 20 minutes until it is completely cooked.
After 20 minutes, turn on the grill and grill the Gata bread for 2 minutes until it becomes golden.
