Step One
To prepare the Persian tomato rice, wash the rice well, then put the tomatoes in a blender or mixer and puree them well (If you do not have a blender, you can grate the tomatoes.)
Note: When soaking the rice, we can add half a cup of mashed tomatoes to the rice if desired. In addition to changing the color of the rice, it also helps to make the tomato tail tastier.
Step Two
Pour the rice into a suitable pot, then add enough water to cover the rice thoroughly. In the end, add 1 teaspoon of salt.
Step Three
At this stage, chop the onion into small pieces, put a suitable pot on the heat and add some oil. Add the chopped onion to the pot and fry a little to lighten the onion well.

Step Four
Meanwhile, peel the potatoes and chop them into the shape of cubes. Then wash the potatoes well with cold water to completely remove excess starch.

Step Five
After the onion is golden, add some turmeric and fry it with the onion. Then, add the tomato paste and fry well until the ingredients are well-mixed.
Note: Adding tomato paste is optional but will help make the food more colorful.
Step Six
Add pureed tomato with some salt and black pepper to the pot and mix with other ingredients.
Step Seven
It is time to add the chopped potatoes to the pot, put the lid on it, and cook the ingredients together for 15 minutes.

Step Eight
Add the soaked rice to the pot. Mix the ingredients, then add a little saffron if you want the final result to be more colorful. Now, put the lid on the pot, and let the Dami gojeh farangi cook on medium heat. It takes about 45 minutes to an hour until our Persian tomato rice gets ready.

After the tomato is ready, mix it well in a pot, put it in the dish, and serve it with Salad Shirazi or yogurt.
