How to Make Satsivi?
Ingredients for Preparing Satsivi
- 1 chicken
- 4 cups of walnut kernels
- 4 garlic cloves
- 2 medium onions
- ½ teaspoon coriander powder
- ½ teaspoon of Khmeli-Suneli
- ⅛ teaspoon cayenne pepper
- ⅛ teaspoon of cinnamon
- Saffron as needed
- 3 red peppers
- 3 cloves of garlic
- 2 tablespoons of balsamic vinegar or grape vinegar
- 1 tablespoon of olive oil
- Salt as needed
- Pepper as needed
Ingredients for Preparing Chicken
- 1 large onion
- 1 large carrot
- 1 stalk of celery
- 2 garlic cloves
- 2 bay leaves
- Parsley and dill as needed
Take a large pot. Pour enough water inside it (the amount of water should cover the chicken.) Allow the water to reach the boiling point. Then add the chicken to the pot and let it boil for a minute.
After one minute:
- Reduce the flame and let the chicken cook well (we reduced the flame because we do not want to cook the chicken in boiling water.) 50 minutes is enough to cook the chicken thoroughly.
- After 50 minutes, remove the pot from the heat and set it aside to cool completely.
- When the chicken is cooled, cut it into pieces.
Note: To keep the color of the chicken bright, we should not let the chicken hang in the water and boil.
How to Prepare Satsivi Sauce?
Pour oil into a pan and let it get a little hot. Add the onion to the pan and fry for 4-5 minutes until golden.
Put walnuts and garlic in an electric grinder and grind about 2-3 times. Pour the ground walnut and garlic mixture into a strainer and press to remove the oil.
Tip: Walnut and garlic oil are a great flavor and are suitable for all kinds of salads, and you can use them for other cooking recipes.
At this stage, add fried oil to the mixture of garlic and walnuts and grind again. Add the hot chicken broth to the minced garlic, walnuts, and onion mixture and stir. Finally, we should have a nice and slightly loose sauce.
Note: It is better to strain the chicken broth before using it
Mix vinegar, coriander, Khmeli-suneli, Indian pepper, saffron, and cinnamon well and set aside.
Add the cooked chicken to the sauce, mix with half of the chicken broth, and boil for 20 minutes on medium flame.
How to Serve Satsivi?
In the end, add red pepper and garlic, season with salt, pepper, and spices of your choice, and enjoy it!
